I also erred on the side of under kneading vs. I took a note from some of the other comments and upped the filling — I used a generous mix of coconut sugar, brown sugar and ground cinnamon. My vegan who loves and misses cinnamon rolls… and non-vegan taste testers all gave these two thumbs up.
